  • 8 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1216 slices thin-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh chives or green onions (optional)
  • Ranch dressing or sour cream for dipping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. If you have a wire rack, place it on top of the baking sheet now.
  2. Prepare the jalapeños: Wearing gloves (if using), slice the jalapeños into 1/2-inch thick rings. You’ll get about 4-5 rings per pepper. Use a small spoon or your fingers to carefully remove the seeds and white membranes from each ring. Set the rings aside on a paper towel to dry slightly.
  3. Make the filling: In a small mixing bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, and a pinch of black pepper. Mix until everything is well combined and smooth. If using chives or green onions, fold them in now.
  4. Fill the jalapeño rings: Using a small spoon or your finger, stuff each jalapeño ring with the cream cheese mixture. Fill them generously but don’t overstuff—the filling should be flush with the edges of the pepper. Wipe away any excess from the outside.
  5. Wrap with bacon: Cut each bacon slice in half crosswise. Take one half-slice and wrap it around each filled jalapeño ring, overlapping the ends slightly. Secure the ends by tucking them under the ring or using a toothpick.
  6. Arrange on the baking sheet: Place the wrapped popper bites seam-side down on your prepared baking sheet or wire rack. Leave a little space between each one for air circulation.
  7. Bake for 18-22 minutes, until the bacon is deeply golden and crispy and the filling is bubbly and slightly browned around the edges. At the 15-minute mark, check them—if the bacon isn’t browning evenly, switch the oven to broil for the last 2-3 minutes, watching carefully.
  8. Let the popper bites cool on the baking sheet for about 5 minutes before serving. This allows the filling to set and the bacon to get even crispier.
  9. Serve warm, arranged on a platter with optional dipping sauce.

Notes

For extra crispy bacon, par-cook the bacon slices in the microwave for 30-45 seconds before wrapping. If you don’t have a wire rack, place popper bites directly on parchment-lined baking sheet and flip halfway through cooking. Assemble up to 24 hours in advance and refrigerate; add 5 minutes to baking time if cooking from cold. For a milder version, use larger jalapeños and remove all seeds and membranes thoroughly.
