This homemade pumpkin chai latte concentrate is rich, aromatic, and perfectly spiced without being cloyingly sweet. Make a batch once and have coffee-shop-level lattes all week long.

  • 4 chai tea bags (recommend Tazo or Stash)
  • 1/2 cup canned pumpkin puree (100% pumpkin, not pie filling)
  • 1/4 cup honey (or maple syrup)
  • 2 tablespoons brown sugar, packed
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract (pure)
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • 1/2 cup milk of choice (for serving per latte)
  • Whipped cream (optional, for serving)
  • Extra pumpkin pie spice or cinnamon (for garnish)

Instructions

  1. Combine water and spices: In a medium saucepan, add 2 cups water, pumpkin pie spice, ground ginger, and a pinch of salt. Whisk until mostly dissolved.
  2. Heat the mixture: Place saucepan over medium-high heat and bring to a gentle boil (about 3-4 minutes), stirring occasionally to prevent sticking.
  3. Add the chai tea bags: Remove pan from heat, add 4 chai tea bags, ensuring they are fully submerged. Let steep for exactly 5 minutes.
  4. Remove the tea bags: After 5 minutes, press tea bags against the side of the pan to extract flavor, then discard.
  5. Add the sweeteners: Stir in honey and brown sugar while mixture is hot, whisking until fully dissolved and smooth.
  6. Stir in the vanilla: Add vanilla extract and whisk once more.
  7. Strain the concentrate: Pour through a fine-mesh strainer into a glass measuring cup or storage jar, pressing with a spoon to extract liquid.
  8. Cool and store: Let cool to room temperature (20-30 minutes), then transfer to a glass jar, seal, and refrigerate.

Notes

Don’t skip the straining step for a silky texture. If the concentrate separates in the fridge, just shake before using. For extra depth, toast spices in a dry pan for 30 seconds before adding water. Let cool completely before refrigerating to avoid condensation.
