A quick and comforting zucchini casserole featuring a creamy cheese base topped with a crispy buttery Ritz cracker crust, perfect for busy weeknights or potlucks.

  • 4 cups zucchini, shredded (about 3 medium zucchinis)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup sour cream
  • 2 large eggs, room temperature
  • 1/2 cup mayonnaise (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1 1/2 cups Ritz crackers, crushed (about 30 crackers)
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup Parmesan cheese, finely grated (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Wash and shred the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  3. In a skillet over medium heat, add a teaspoon of olive oil. Sauté the finely chopped onion and minced garlic until softened and fragrant, about 3-5 minutes. Let cool slightly.
  4. In a large mixing bowl, combine the drained zucchini, sautéed onions and garlic, shredded cheddar and mozzarella cheeses, sour cream, mayonnaise (if using), eggs, salt, pepper, and dried herbs. Stir gently until evenly mixed.
  5. Spread the zucchini mixture evenly in the prepared baking dish, smoothing the top with a spatula.
  6. Crush the Ritz crackers finely using a food processor or by placing them in a zip-top bag and rolling with a rolling pin. In a small bowl, combine the crushed crackers, melted butter, and Parmesan cheese (if using). Mix until crumbs are evenly coated.
  7. Evenly distribute the Ritz cracker mixture over the zucchini base, pressing down lightly to help it adhere and crisp up during baking.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbling gently around the edges.
  9. Let the casserole cool for about 10 minutes before serving to help it set and make slicing easier.

Notes

Drain zucchini thoroughly to avoid a watery casserole. Sauté onions and garlic for better flavor. Use room temperature eggs for better binding. Crush Ritz crackers finely but not to dust for a crispy topping. Watch the oven to prevent over-browning and let the casserole rest before serving.
