Ingredients

Scale
  • 6 medium apples (about 2.5 pounds), preferably Honeycrisp or Granny Smith
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon kosher salt
  • 1 tablespoon lemon juice
  • 1/2 cup salted caramel sauce
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1 teaspoon vanilla extract
  • Vanilla ice cream (for serving, optional)
  • Extra salted caramel sauce (for serving, optional)
  • Whipped cream (for serving, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and position a rack in the center. Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel, core, and slice the apples into roughly 1/4-inch thick slices. You should have about 6 to 7 cups of sliced apples.
  3. In a large mixing bowl, combine the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss until every apple slice is coated. Let sit for about 5 minutes.
  4. In a medium mixing bowl, whisk together the rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold butter cubes and vanilla extract. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse meal with some pea-sized butter pieces remaining. Refrigerate while you finish the next step.
  5. Pour the apple mixture into the prepared baking dish and spread into an even layer. Drizzle the salted caramel sauce evenly over the top of the apples. Do not stir.
  6. Sprinkle the oat crumble mixture evenly over the apples and caramel. Do not press it down. Cover all the apples completely.
  7. Place the dish on a baking sheet to catch any overflow. Bake for 40 to 45 minutes, or until the filling is bubbly around the edges and the topping is deep golden brown. If the topping browns too quickly, tent loosely with foil for the remaining time.
  8. Let the crisp cool on a wire rack for at least 15 to 20 minutes before serving.
  9. Serve warm, topped with vanilla ice cream and extra salted caramel sauce if desired.

Notes

For best results, use a mix of Honeycrisp and Granny Smith apples. Keep the butter cold for the crumble topping. Let the apples macerate for 5 minutes to draw out juices. Do not skip the cooling time before serving to allow the filling to set. For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking blend.
