Cozy Sausage and Potato Soup with Kale: An Easy One-Pot Meal

A hearty, creamy sausage and potato soup with kale that’s perfect for cold-weather comfort. Made in one pot with simple ingredients, this soup is naturally creamy without heavy cream.

Ingredients

  • 1 lb smoked sausage or kielbasa, sliced into ½-inch rounds
  • 1 large yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 ribs celery, diced
  • 4 cloves garlic, minced
  • 2 lbs Yukon Gold potatoes (about 56 medium), diced into ½-inch cubes
  • 6 cups low-sodium chicken broth
  • 1 large bunch kale (preferably lacinato), stems removed and leaves chopped
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional garnish: fresh parsley, grated Parmesan cheese, or a squeeze of lemon juice

Instructions

  1. Brown the sausage: Heat olive oil in a Dutch oven over medium-high heat. Add sliced sausage in a single layer (work in batches if needed). Cook undisturbed for 2-3 minutes until deeply browned, then flip and cook another 2 minutes. Transfer to a plate and set aside. Do not wipe out the pot.
  2. Sauté the aromatics: Reduce heat to medium. Add onion, carrots, and celery to the pot. Cook, stirring occasionally, until onion is translucent and vegetables have softened (5-7 minutes). Add garlic and cook for 30 seconds until fragrant.
  3. Bloom the spices: Stir in dried thyme, smoked paprika, and red pepper flakes (if using). Cook for 30 seconds, stirring constantly.
  4. Add potatoes and broth: Add diced potatoes and chicken broth. Stir, scraping the bottom to release any fond. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for 15-20 minutes until potatoes are tender.
  5. Return sausage and add kale: Stir browned sausage back into the pot. Add chopped kale in handfuls, stirring after each addition. Simmer for 3-5 minutes until kale is tender but still has structure.
  6. Blitz for creaminess (optional): Use an immersion blender to give the soup 3-4 quick pulses to break down some potatoes and thicken the broth. Alternatively, mash some potatoes against the side of the pot with a wooden spoon.
  7. Season and finish: Taste and add salt and pepper as needed. If soup is too thick, add a splash more broth or water. If too thin, simmer uncovered for a few more minutes.
  8. Rest and serve: Let soup sit off the heat for 5 minutes before serving. Ladle into bowls and garnish as desired.

Notes

For best texture, use Yukon Gold potatoes. Don’t overcrowd the pot when browning sausage. Add kale only after potatoes are tender to avoid overcooking. Let soup rest 5 minutes before serving for flavors to meld. For meal prep, slightly undercook kale as it will continue to soften when reheated.
