  • 12 ounces fresh apple cider (cloudy, unfiltered)
  • 6 ounces dry sparkling wine (Prosecco or Cava, Brut or Extra Brut)
  • 1 cinnamon stick (cassia preferred)
  • 1 star anise pod
  • 2 thin slices fresh ginger
  • 1 orange peel twist (for garnish)
  • Ice cubes (optional)

Instructions

  1. Pour the fresh apple cider into a medium glass pitcher.
  2. Add the cinnamon stick, star anise pod, and fresh ginger slices to the cider.
  3. Cover the pitcher and refrigerate to infuse for at least 30 minutes, or ideally overnight for deeper flavor.
  4. Ensure the sparkling wine is very cold (around 40°F/4°C).
  5. Strain the spiced cider through a fine mesh sieve or cocktail strainer into a clean pitcher to remove the spices and ginger.
  6. Pour 6 ounces of the strained spiced apple cider into each of two champagne flutes or coupe glasses.
  7. Slowly pour 3 ounces of the cold sparkling wine over the cider in each glass to preserve carbonation.
  8. Twist the orange peel over the glass to release oils, rub it on the rim, and drop it in as a garnish.
  9. Serve immediately.

Notes

Use fresh, cloudy apple cider rather than filtered juice for better flavor. Ensure all ingredients are cold to maintain carbonation. Do not mix the sparkling wine with the cider until just before serving to prevent flatness. For a non-alcoholic version, replace wine with ginger beer or sparkling water.
