  • 1 teaspoon vanilla extract
  • ⅓ cup buttermilk, at room temperature
  • ¼ cup real maple syrup
  • 2 tablespoons heavy cream
  • 1 ½ cups powdered sugar, sifted
  • Pinch of salt
  • ½ teaspoon vanilla extract

Instructions

  1. Reduce the apple cider: Pour 2 cups apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer gently, stirring occasionally, until reduced to about ⅓ cup (15-20 minutes). Set aside to cool.
  2. Preheat oven to 350°F (175°C). Grease a 10 to 12-cup Bundt pan thoroughly with butter and dust with flour.
  3. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  4. In a separate bowl, whisk together melted butter, oil, brown sugar, eggs, vanilla, buttermilk, and cooled reduced cider until smooth.
  5. Pour wet ingredients into dry ingredients and fold with a rubber spatula until just combined (a few streaks of flour are okay).
  6. Scrape batter into prepared Bundt pan and spread evenly. Tap pan gently on counter to release air bubbles.
  7. Bake for 45-55 minutes, or until a toothpick inserted near the center comes out clean or with a few moist crumbs.
  8. Let cake cool in pan on a wire rack for exactly 15 minutes. Then invert onto rack and cool completely (1-2 hours).
  9. Make the glaze: In a medium bowl, whisk together maple syrup, heavy cream, vanilla, and salt. Gradually add powdered sugar, whisking until smooth and thick but pourable.
  10. Place cooled cake on serving plate or parchment-lined baking sheet. Pour glaze over top, letting it cascade down sides. Let set 15-20 minutes before slicing.

Notes

Reducing the apple cider is essential for concentrated flavor and proper texture. Use room temperature eggs and buttermilk for best results. Grease the Bundt pan thoroughly to prevent sticking. For gluten-free, use a 1-to-1 gluten-free flour blend. For dairy-free, use plant-based butter and buttermilk substitute. The cake tastes even better on day two.
