Instructions

  1. Soften the cream cheese: Take the 8-ounce block of cream cheese out of the fridge about 30 minutes before starting. It should be room temperature—soft to the touch but not warm or greasy. If in a hurry, unwrap and microwave on 50% power for 15 seconds, flip, then another 10 seconds until soft but still holding its shape.
  2. Beat the cream cheese: Place the softened cream cheese in a medium mixing bowl. Using a hand mixer on medium speed, beat for 30-45 seconds until completely smooth with no lumps. Scrape down the sides and bottom of the bowl with a rubber spatula.
  3. Add the flavorings: Add the packed brown sugar, vanilla extract, and ground cinnamon to the bowl. Beat on low speed just until combined, about 15 seconds. Do not overmix; the mixture will look slightly grainy from the brown sugar.
  4. Fold in the caramel: Measure out ½ cup of caramel sauce. Add about half to the cream cheese mixture and fold gently with a spatula until partially incorporated. Add the remaining caramel and give it just three or four folds, leaving distinct caramel swirls.
  5. Taste and adjust: Dip an apple slice in and taste. Adjust with more cinnamon, a pinch of salt, or extra caramel drizzle as desired.
  6. Transfer to serving bowl: Scoop the dip into a serving bowl and smooth the top. Drizzle extra caramel sauce decoratively over the surface. Sprinkle with a pinch of cinnamon and flaky salt if using.
  7. Prep the apples: Just before serving, core and slice apples into ¼-inch thick wedges. If prepping ahead, toss slices with 1 tablespoon lemon juice to prevent browning.
  8. Serve immediately: Best served within an hour of making, at room temperature.

Notes

Temperature is key: cream cheese should be at cool room temperature. Do not overmix the caramel to keep distinct swirls. Let the dip rest for 15-20 minutes before serving for best flavor. Store leftovers covered in the refrigerator for up to 4 days; let sit at room temperature for 20 minutes before serving again. Not recommended for freezing.
