Creamy Firecracker Popsicles Recipe with Fresh Strawberry Layers

A quick and easy summer treat featuring creamy popsicles layered with fresh strawberry puree, delivering a silky texture and vibrant flavor perfect for hot days.

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup heavy cream
  • 1 cup whole milk (or almond milk for a lighter version)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar (optional)

Instructions

  1. Hull and slice 2 cups of fresh strawberries. Place half of them in the blender with 1 tablespoon of lemon juice and 1 tablespoon of granulated sugar. Blend until smooth but still slightly chunky for texture. Transfer to a bowl and set aside.
  2. In a separate bowl, whisk together 1 cup heavy cream, 1 cup whole milk, 1/4 cup honey (or maple syrup), and 1 teaspoon vanilla extract until the honey is fully dissolved and the mixture is smooth.
  3. Start by spooning a couple of tablespoons of the creamy mixture into each popsicle mold. Then add a spoonful of the strawberry puree, followed by another creamy layer. Repeat until the molds are filled, finishing with the creamy mixture on top. Gently tap the molds on the counter to settle the layers.
  4. Insert popsicle sticks and freeze for 4 to 6 hours or until completely solid. Overnight freezing is recommended for best results.
  5. Run warm water over the outside of the molds for a few seconds to release the popsicles easily. Serve immediately or store in a freezer-safe bag for up to one week.

Notes

Use ripe strawberries for best flavor and texture. Work quickly when layering to prevent mixing. If strawberry puree is too runny, add a pinch of cornstarch and heat gently to thicken. Vanilla extract adds subtle depth. Avoid overfilling molds to allow for expansion during freezing. For dairy-free version, substitute heavy cream and milk with full-fat coconut milk.
