  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 2 cups chicken broth (low-sodium)
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 1/2 cup heavy cream or half-and-half
  • 4 oz cream cheese, cut into cubes
  • 1 cup shredded cheddar cheese (for topping)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Heat a large pot over medium-high heat. Add ground beef and diced onion. Cook for 5-7 minutes, breaking up the beef, until browned and onions are soft. Drain excess fat if necessary.
  2. Stir in minced garlic and taco seasoning. Cook for 1 minute until fragrant, being careful not to burn the garlic.
  3. Add rinsed black beans, corn, diced tomatoes (with juices), and chicken broth. Stir well to combine and scrape up browned bits from the bottom of the pot. Bring the mixture to a boil.
  4. Reduce heat to low and simmer uncovered for 10-15 minutes to allow flavors to meld and soup to thicken slightly.
  5. Stir in heavy cream and cubed cream cheese. Whisk gently until the cream cheese is fully melted and the soup is smooth. Do not boil vigorously after adding dairy.
  6. Taste and adjust seasoning with salt and pepper if needed. Serve hot, topped with shredded cheddar, sour cream, and fresh cilantro.

Notes

For a vegetarian version, swap ground beef for lentils or plant-based crumble. For dairy-free, use coconut cream and vegan cream cheese. If the soup is too thick, add a splash of broth. If too thin, simmer longer. Leftovers keep in the fridge for up to 4 days; add liquid when reheating. Freeze the base without dairy for up to 3 months.
