  • 2 tablespoons (30g) pure pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 1.5 cups (350ml) cold brew coffee
  • 1 cup ice cubes
  • 23 tablespoons heavy cream or oat milk
  • Optional: Cinnamon or nutmeg for garnish

Instructions

  1. In a small saucepan, combine brown sugar, water, pumpkin puree, pumpkin pie spice, vanilla, and salt.
  2. Whisk ingredients together over medium heat until the sugar dissolves completely (about 3-4 minutes), ensuring the pumpkin doesn’t clump.
  3. Reduce heat to low and simmer for 5 minutes until the mixture thickens slightly to a thin honey consistency.
  4. Remove from heat and let the syrup cool completely (crucial to prevent melting ice).
  5. Fill tall glasses with ice cubes.
  6. Pour cold brew coffee over the ice.
  7. Add 2-3 tablespoons of the cooled pumpkin syrup to each glass and stir thoroughly.
  8. Top with heavy cream or oat milk.
  9. Garnish with a sprinkle of cinnamon or nutmeg and serve immediately.

Notes

The syrup can be made ahead and stored in an airtight jar in the refrigerator for up to two weeks. Ensure the syrup is completely cool before adding to the drink to prevent the ice from melting too quickly. For a dairy-free version, use oat milk or coconut cream.
