  • 1 cup (240ml) full-fat coconut milk
  • 1/2 cup (120ml) unsweetened almond milk
  • 23 tablespoons powdered erythritol
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • Pinch of sea salt
  • Optional: fresh mint leaves or a pinch of ground cinnamon

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunge into ice water. The skin should slip right off. Chop into small chunks (about 2 cups or 300g). This takes roughly 5 minutes.
  2. Add the chopped peaches, 1 cup (240ml) full-fat coconut milk, 1/2 cup (120ml) almond milk, 2-3 tablespoons powdered erythritol, 1 teaspoon vanilla extract, 1 tablespoon fresh lemon juice, and a pinch of sea salt into your blender. Blend on high for about 1 minute until smooth and creamy, with a thick smoothie-like texture.
  3. Taste and adjust sweetness if needed by adding more erythritol or blending again.
  4. Carefully fill your popsicle molds, leaving a small gap at the top for expansion. Tap molds gently on the counter to release air bubbles.
  5. Insert sticks and freeze for at least 6 hours or overnight until fully solidified. Freeze on a flat surface for best results.
  6. To unmold, run warm water over the outside of the molds for a few seconds, then gently pull out the popsicles and enjoy.

Notes

Use ripe peaches for best flavor and texture. Powdered erythritol dissolves better than granulated for smooth sweetness. Freeze on a flat surface and avoid opening freezer repeatedly to prevent ice crystals. Let popsicles sit at room temperature for 3-5 minutes before eating for creamier texture.
