  • 1 cup (240 ml) low sodium chicken broth
  • 1/2 cup (120 ml) heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • Salt and pepper to taste
  • A handful fresh basil, roughly chopped
  • Optional: cooked chicken or shrimp for added protein

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225 grams) of penne pasta and cook according to package instructions until al dente, about 10 minutes. Reserve 1/2 cup (120 ml) of pasta water before draining.
  2. While pasta cooks, heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and 1/2 teaspoon red pepper flakes. Stir frequently for 1-2 minutes until fragrant but not browned.
  3. Stir in 1/3 cup chopped sun-dried tomatoes and cook for another minute.
  4. Pour in 1 cup (240 ml) chicken broth and bring to a simmer. Let reduce slightly for 3-4 minutes, stirring occasionally.
  5. Lower heat to medium-low and add 1/2 cup (120 ml) heavy cream. Stir gently, then mix in 3/4 cup freshly grated Parmesan cheese until melted and sauce thickens. Add reserved pasta water a tablespoon at a time if sauce is too thick.
  6. Stir in 1 teaspoon Italian seasoning, salt, and pepper to taste.
  7. Add drained pasta to the skillet and toss gently to coat evenly with sauce. Cook together for 1-2 minutes to absorb flavors.
  8. Remove from heat and sprinkle fresh chopped basil on top. Add cooked chicken or shrimp if using, tossing gently one last time.

Notes

Keep heat moderate to avoid curdling the cream. Stir often and melt cheese slowly for best texture. Use reserved pasta water to adjust sauce consistency. Burnt garlic ruins flavor, so watch carefully. Freshly grated Parmesan melts better than pre-grated.
