A comforting, creamy soup that captures the flavors of traditional lasagna in a quick, one-pot meal. Featuring browned beef, tender noodles cooked directly in the sauce, and rich ricotta dollops, this dish is perfect for busy weeknights.

  • 1 lb ground beef (80/20 blend)
  • 1/2 lb Italian sausage (casings removed)
  • 1 large yellow onion, diced
  • 34 cloves garlic, minced
  • 2 jars (24 oz each) marinara sauce
  • 4 cups chicken broth (low-sodium)
  • 8 oz cream cheese, cut into cubes
  • 810 lasagna noodles, broken in half
  • 1 cup ricotta cheese
  • 1 egg yolk (for ricotta mixture)
  • 1 tbsp parmesan cheese (for ricotta mixture)
  • 1.5 cups shredded low-moisture mozzarella cheese
  • 1/4 cup fresh basil, chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Olive oil (for cooking)

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat with a splash of olive oil. Add ground beef and Italian sausage, breaking it up with a wooden spoon. Cook until browned and no pink remains. Drain excess fat if necessary.
  2. Reduce heat to medium. Add diced onion and cook until soft and translucent (3-4 minutes). Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in marinara sauce and chicken broth. Stir well, scraping up browned bits from the bottom of the pot. Add Italian seasoning, salt, and pepper. Bring to a gentle simmer.
  4. Stir in cubed cream cheese until completely melted and incorporated into the sauce.
  5. Add broken lasagna noodles to the pot, ensuring they are submerged. Cover and simmer for about 15 minutes, stirring every 5 minutes to prevent sticking. Check for doneness at 12 minutes.
  6. While noodles cook, mix ricotta cheese, egg yolk, 1 tbsp parmesan, and a pinch of salt in a small bowl until smooth.
  7. Once noodles are tender, remove pot from heat. Stir in half of the mozzarella cheese until melted. Taste and adjust seasoning.
  8. Ladle soup into bowls. Top each serving with a dollop of the ricotta mixture, remaining mozzarella, and fresh basil. Serve immediately.

Notes

Noodles will continue to cook in the hot soup after removing from heat, so pull them off when slightly al dente. The soup thickens significantly as it cools; add water or broth when reheating. For leftovers, store in an airtight container for up to 3 days. Freezing is possible but noodles may become mushy upon thawing.
