Creamy One-Pot Tuscan Chicken Pasta

A quick and easy one-pot Tuscan chicken pasta with a rich, velvety sauce, sun-dried tomatoes, and fresh spinach, perfect for comforting weeknight dinners.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 3 cups fresh baby spinach leaves
  • 3 cups low sodium chicken broth
  • 1 cup heavy cream
  • 8 ounces uncooked penne pasta
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • Salt and black pepper, to taste
  • Red pepper flakes, optional pinch

Instructions

  1. Pat the chicken pieces dry and season with salt, pepper, and half the Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken in a single layer and sear for 3-4 minutes without moving, then flip and cook another 2-3 minutes until almost cooked through. Remove chicken and set aside.
  3. Lower heat to medium and add minced garlic and sun-dried tomatoes to the same pan. Stir for about 1 minute until fragrant.
  4. Pour in chicken broth and heavy cream, scraping the bottom of the pan to loosen browned bits. Stir in uncooked penne pasta and remaining Italian seasoning. Bring to a gentle boil.
  5. Cover pan and reduce heat to medium-low. Cook pasta for 12-15 minutes, stirring occasionally to prevent sticking.
  6. When pasta is nearly tender and most liquid absorbed, stir chicken back in along with fresh spinach. Cook uncovered for 2-3 minutes until spinach wilts and chicken is fully cooked (165°F internal temperature).
  7. Remove pan from heat and stir in grated Parmesan cheese until melted and creamy. Adjust seasoning with salt, pepper, and optional red pepper flakes.
  8. Serve immediately, optionally garnished with extra Parmesan or fresh basil.

Notes

If sauce is too thick, add a splash of chicken broth or cream to loosen. If too thin, cook uncovered a bit longer to reduce. Stir gently and regularly to prevent pasta from sticking. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. For gluten-free, use gluten-free penne pasta and adjust cooking time accordingly.
