  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the ripe banana with a fork until mostly smooth.
  2. Add milk, peanut butter, maple syrup, and vanilla extract to the mashed banana. Stir until peanut butter is mostly incorporated.
  3. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir until well combined, scraping the bottom of the jar.
  4. Seal the jar and refrigerate for at least 4 hours, preferably overnight.
  5. In the morning, stir the oats. If too thick, add a splash of milk to reach desired consistency.
  6. Add toppings (sliced banana, extra peanut butter, chopped peanuts, cinnamon) and enjoy cold or warm.

Notes
