  • 1 cup (240ml) milk (any kind)
  • 1/2 cup (120g) plain Greek yogurt
  • 1 large ripe banana, mashed
  • 3 tablespoons (48g) creamy peanut butter, divided
  • 12 tablespoons (15-30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana thoroughly with a fork in a small mixing bowl until mostly smooth with a few tiny lumps.
  2. Add milk, Greek yogurt, 2 tablespoons of peanut butter, maple syrup or honey, and vanilla extract to the mashed banana. Whisk until the peanut butter is fully incorporated.
  3. Stir in rolled oats, chia seeds, and a pinch of salt until everything is evenly combined.
  4. Divide the mixture evenly into two mason jars or airtight containers, leaving about an inch of space at the top.
  5. Warm the remaining 1 tablespoon of peanut butter in the microwave for about 10 seconds until drizzle-able. Drop small spoonfuls on top of each jar and gently swirl with a knife or skewer.
  6. Seal the jars and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, extra peanut butter, granola, or cinnamon. Serve cold or microwave for 30-60 seconds if desired.

Notes

For best texture, use rolled old-fashioned oats, not instant or steel-cut. The chia seeds are essential for thickness; if you don’t have them, substitute ground flaxseed. Warm the peanut butter before swirling for even distribution. Taste the mixture before refrigerating—it should be slightly sweeter and more peanut-buttery than you think, as flavors mellow overnight. Add toppings in the morning, not the night before, to keep them fresh. Store in the refrigerator for up to 5 days; do not freeze.
