  • 2 pounds boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans (great northern or cannellini), drained and rinsed
  • 1 can (4 oz) diced green chilies (Ro*Tel or Hatch chilies)
  • 4 cups low sodium chicken broth
  • 8 ounces cream cheese, softened
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)
  • Lime wedges (for serving)

Instructions

  1. Place the 2 pounds of boneless, skinless chicken breasts in the bottom of your slow cooker.
  2. Scatter the chopped onion and minced garlic over the chicken. Sprinkle ground cumin, chili powder, oregano, salt, and pepper on top.
  3. Add the chicken broth, drained white beans, and diced green chilies. Stir gently to combine.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken is tender and shreds easily.
  5. Remove chicken and shred with two forks. Return shredded chicken to the slow cooker.
  6. Stir in the softened cream cheese until fully melted and combined.
  7. Cook uncovered on LOW for another 15-20 minutes to thicken and blend flavors.
  8. Ladle chili into bowls and garnish with chopped cilantro and a squeeze of lime.

Notes

Softening the cream cheese before adding helps it melt smoothly without lumps. If chili is too thick, add a splash of broth or water to loosen. For dairy-free, substitute cream cheese with a dairy-free alternative and use almond or oat milk instead of broth. Frozen chicken breasts can be used but increase cooking time by 1 hour on low or 30 minutes on high.
