  • ½ cup small-curd full-fat cottage cheese (120g)
  • 1 tablespoon unsalted butter (14g)
  • 1 to 2 teaspoons everything bagel seasoning
  • Pinch of salt
  • Pinch of freshly ground black pepper (optional)
  • 1 tablespoon milk or cream (optional, 15ml)

Instructions

  1. Crack 4 large eggs into a mixing bowl. Add a pinch of salt and pepper. Whisk vigorously with a fork or whisk until yolks and whites are fully combined and slightly frothy, about 30 seconds.
  2. Stir in ½ cup (120g) of small-curd cottage cheese. The curds will add moisture and creaminess.
  3. Place a non-stick skillet over low-medium heat. Add 1 tablespoon (14g) of unsalted butter and let it melt gently, coating the pan evenly without browning.
  4. Pour the egg and cottage cheese mixture into the pan. Let it sit undisturbed for about 20 seconds until edges start to set.
  5. Using a silicone spatula, slowly push the eggs from the edges to the center, folding gently. Stir every 15-20 seconds until eggs are mostly cooked but still slightly runny, about 2 to 3 minutes.
  6. Remove the pan from heat just before eggs look fully set; residual heat will finish cooking them, keeping the scramble moist and creamy.
  7. Sprinkle 1 to 2 teaspoons of everything bagel seasoning over the eggs and gently fold to distribute evenly. Taste and adjust salt if needed.
  8. Serve immediately, optionally adding a small pat of butter on top for extra silkiness.
