  • 1 medium yellow onion, diced
  • 34 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 2 lbs chicken breasts or thighs, cooked and shredded
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), rinsed and drained
  • 1 can (4 oz) diced green chiles
  • 1 cup salsa verde (medium-heat recommended)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup Monterey Jack cheese, shredded
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. Heat butter in a large pot over medium heat. Add diced onion and cook until translucent (4-5 minutes).
  2. Add minced garlic, cumin, oregano, and red pepper flakes. Cook for 1 minute until fragrant.
  3. Pour in salsa verde and simmer for 1 minute to meld flavors.
  4. Add chicken broth and white beans. Stir well and bring to a gentle boil.
  5. Reduce heat to low, add shredded chicken, and simmer uncovered for 10 minutes.
  6. Mash about one cup of the bean mixture against the side of the pot or blend briefly to thicken the chili.
  7. Reduce heat to low. Slowly stir in heavy cream and shredded Monterey Jack cheese until melted and smooth. Do not boil.
  8. Remove from heat. Stir in lime juice and half of the cilantro. Adjust salt and pepper to taste.
  9. Serve hot, topped with remaining cilantro, extra cheese, sour cream, or tortilla chips.

Notes

For a thicker chili, do not rinse canned beans too thoroughly. To freeze, store in airtight containers for up to 3 months; reheat gently on the stove and whisk to prevent separation. For a vegetarian version, swap chicken for extra beans or zucchini. For dairy-free, use coconut cream.
