  • 3 medium fresh peaches, peeled and diced (or canned peaches, drained)
  • 1/4 cup packed light brown sugar
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons milk
  • 1/4 cup powdered sugar
  • Optional: 1 teaspoon lemon juice

Instructions

  1. In a medium bowl, combine diced peaches, brown sugar, granulated sugar, cornstarch, cinnamon, vanilla extract, and lemon juice if using. Stir well and set aside for 10 minutes to thicken.
  2. Lightly flour a surface and roll out each refrigerated pie crust to about 1/8-inch thickness. Cut into 4-inch squares, about 8 squares per sheet.
  3. Place a heaping tablespoon of peach filling in the center of each square. Brush edges with melted butter, fold dough over to form a triangle or rectangle, and press edges firmly with a fork to seal.
  4. Mix milk with a little brown sugar and brush over the tops of each hand pie for a light glaze.
  5. Preheat the air fryer to 350°F and warm for 3-5 minutes.
  6. Arrange hand pies in a single layer in the air fryer basket without touching. Cook for 12-15 minutes, flipping halfway through, until golden brown and crisp.
  7. While pies cook, mix powdered sugar with 2 tablespoons melted brown sugar and 1-2 tablespoons milk until smooth to make the brown sugar glaze.
  8. Let hand pies cool for 5 minutes on a wire rack, then drizzle the brown sugar glaze over the top.

Notes

Do not skip cornstarch to keep filling thick and prevent soggy crust. Seal edges well with a fork to avoid leaks. Use ripe but firm peaches for best flavor. Adjust air fryer temperature if edges brown too fast. Drizzle glaze just before serving to keep it shiny.
