Crispy Baked Buffalo Cauliflower Bites with Blue Cheese

These crispy baked buffalo cauliflower bites are not your average roasted vegetable. They have been tested, tweaked, and tested again to get that perfect texture—crunchy on the outside, tender on the inside, and absolutely drenched in spicy, buttery buffalo sauce.

  • 1 large head of cauliflower (about 2 to 2.5 pounds), cut into bite-sized florets
  • 1 cup all-purpose flour (or gluten-free all-purpose blend)
  • ½ cup panko breadcrumbs (or gluten-free panko)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ cup buttermilk (or ¾ cup milk mixed with 1 tablespoon lemon juice, let sit for 5 minutes)
  • 1 large egg
  • ½ cup (1 stick) unsalted butter, melted
  • ⅔ cup hot sauce (like Frank’s RedHot Original)
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon Worcestershire sauce (optional)
  • ½ cup sour cream (or plain Greek yogurt)
  • ¼ cup mayonnaise
  • ½ cup crumbled blue cheese, plus more for garnish
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh chives or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash and thoroughly dry the cauliflower head. Cut it into uniform, bite-sized florets. Pat them very dry with a clean kitchen towel.
  3. In a shallow bowl, whisk together the all-purpose flour, panko breadcrumbs, garlic powder, smoked paprika, salt, and pepper. In a second shallow bowl, whisk together the buttermilk and the egg until fully combined.
  4. Working in batches, dip each cauliflower floret first into the buttermilk mixture, letting any excess drip off. Then, roll it in the flour-panko mixture, pressing gently so the coating adheres. Place the coated florets on the prepared baking sheet in a single layer, making sure they are not touching.
  5. Bake for 20 minutes. Then, carefully flip each floret with a spatula. Bake for another 15-20 minutes, or until the cauliflower is tender when pierced with a fork and the coating is deep golden brown and crispy.
  6. While the cauliflower bakes, make the sauce. In a small saucepan over low heat, combine the melted butter, hot sauce, brown sugar (if using), and Worcestershire sauce (if using). Whisk until smooth and heated through. Do not let it boil. Keep it warm on the lowest setting.
  7. In a small bowl, combine the sour cream, mayonnaise, crumbled blue cheese, lemon juice, and fresh chives. Stir until well combined. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
  8. Once the cauliflower is done, transfer the hot florets to a large bowl. Pour the warm buffalo sauce over the top and gently toss with a spatula until every piece is evenly coated. Serve immediately with the blue cheese dip and extra crumbled blue cheese and chives on top.

Notes

Do not skip drying the cauliflower thoroughly. Use panko for maximum crunch. Do not overcrowd the pan. Toss in sauce right before serving to maintain crispiness. For a vegan version, use almond milk with lemon juice, a flax egg, and vegan butter.
