  • 3/4 cup (180ml) water
  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (120ml) buffalo sauce (e.g., Frank’s RedHot Original)
  • 2 tablespoons unsalted butter, melted
  • For the Blue Cheese Dipping Sauce:
  • 1/2 cup (120g) sour cream
  • 1/4 cup (60g) mayonnaise
  • 1/4 cup (60g) crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together flour, cornstarch, garlic powder, paprika, salt, and black pepper. Slowly add water while whisking until smooth batter forms, thick enough to coat cauliflower.
  3. Add cauliflower florets to the batter and toss until fully coated. Let excess batter drip off.
  4. Arrange coated florets in a single layer on the prepared baking sheet, avoiding overcrowding.
  5. Bake for 20-25 minutes, flipping each piece halfway through (around 12 minutes) until golden and crispy.
  6. While baking, melt butter and stir in buffalo sauce until combined and warm.
  7. Transfer baked cauliflower to a large bowl, pour buffalo sauce over, and gently toss to coat evenly.
  8. Return sauced bites to the baking sheet and bake for another 5-7 minutes to set the sauce.
  9. In a small bowl, mix sour cream, mayonnaise, blue cheese, lemon juice, garlic powder, salt, and pepper. Chill until serving.
  10. Serve the crispy buffalo cauliflower bites warm with blue cheese dipping sauce.

Notes

If batter is too thick, add a splash more water. Flip florets halfway through baking for even crispiness. Use parchment or silicone mats to prevent sticking. Blue cheese dip tastes better after chilling at least 30 minutes. For extra heat, add cayenne to buffalo sauce. Air frying is possible but requires frequent shaking to avoid burning. To reduce mess, brush buffalo sauce on bites instead of tossing.
