  • 1 1/2 cups (360ml) whole milk
  • 1 1/2 cups (150g) sharp cheddar cheese, freshly grated
  • 1/2 cup (50g) Gruyère cheese, freshly grated
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp Worcestershire sauce
  • Salt and black pepper to taste
  • Coarse sea salt or pretzel salt (for topping)
  • 1 egg beaten with 1 tbsp water (for egg wash)

Instructions

  1. Activate the yeast: In a large bowl, combine lukewarm water, beer, sugar, and yeast. Stir gently and let sit for 5-10 minutes until frothy.
  2. Mix the dough: Add melted butter and salt to the yeast mixture. Gradually add flour and mix until a shaggy dough forms. Knead for 5-7 minutes (machine) or 8-10 minutes (hand) until smooth and elastic.
  3. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm area for 45-60 minutes until doubled in size.
  4. Prepare boiling bath: While dough rises, bring a large pot of water to a boil, then reduce to a simmer. Stir in baking soda.
  5. Shape the pretzels: Punch down dough and divide into 12-16 pieces. Roll each into a 12-14 inch rope, form into a classic pretzel shape, and place on a parchment-lined baking sheet.
