This crispy maple glazed delicata squash is a quick and easy side dish that features caramelized edges and a tender interior, with a sweet maple glaze and a subtle kick of cayenne. Perfect for fall gatherings, it’s a crowd-pleaser that comes together in about 30 minutes.

  • 2 medium delicata squash
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt (or ½ teaspoon table salt)
  • ½ teaspoon freshly ground black pepper
  • ⅛ teaspoon cayenne pepper (optional)
  • 45 fresh thyme sprigs (for garnish)
  • Flaky sea salt (for finishing, e.g., Maldon)

Instructions

  1. Preheat your oven to 425°F (220°C). Let it fully preheat for at least 15 minutes.
  2. Wash the delicata squash thoroughly under cold water and pat dry. Trim off both ends (about ¼ inch from each end). Cut the squash in half lengthwise and scoop out the seeds and stringy pulp with a spoon.
  3. Place each half flat-side down on a cutting board and slice crosswise into ½-inch thick half-moons. Try to keep them uniform in thickness.
  4. In a small bowl, whisk together the maple syrup, olive oil, kosher salt, black pepper, and cayenne pepper until fully combined.
  5. Place the squash slices in a large bowl and pour the glaze over them. Use your hands to gently toss and coat each piece evenly.
  6. Line a baking sheet with parchment paper. Arrange the squash slices in a single layer, making sure they aren’t touching (about ¼ inch between each slice). Use two baking sheets if needed.
  7. Roast at 425°F for 15 minutes. Do not open the oven during this time.
  8. After 15 minutes, remove the baking sheet from the oven. Use tongs to flip each slice over. Reduce the oven temperature to 375°F (190°C) and return the baking sheet to the oven.
  9. Roast for another 10-15 minutes, until the edges are crispy and deep golden brown, and a fork slides easily into the thickest part of a slice.
  10. Remove from the oven and let the squash rest on the baking sheet for 2-3 minutes. Transfer to a serving platter, garnish with fresh thyme sprigs, and sprinkle with flaky sea salt. Serve immediately.

Notes

For extra shine and maple flavor, reserve about 1 tablespoon of the glaze and brush it on during the last 5 minutes of roasting. Let the squash sit at room temperature for 15 minutes before roasting for more even cooking. If the edges brown too quickly, cover them with small pieces of foil. The squash is best served within 10 minutes of roasting for maximum crispiness.
