  • 1 cup (110g) Monterey Jack cheese, shredded
  • 1 cup (110g) mozzarella cheese, shredded
  • 1/2 cup (120g) black beans, rinsed and drained (optional)
  • 12 fresh jalapeños, thinly sliced
  • 2 stalks green onions, thinly sliced
  • A handful fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, toss the shredded chicken with smoked paprika, ground cumin, garlic powder, and a pinch of salt until evenly coated.
  3. Line a large sheet pan with parchment paper or lightly spray with non-stick spray.
  4. Spread the tortilla chips evenly across the pan and drizzle with olive oil, tossing gently to coat.
  5. Scatter the seasoned pulled chicken evenly over the chips.
  6. Add black beans (if using) and sliced jalapeños evenly over the top.
  7. Sprinkle the cheese blend liberally over everything.
  8. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted, bubbly, and slightly golden around the edges.
  9. Remove from oven carefully and sprinkle sliced green onions and fresh cilantro on top.
  10. Serve immediately with lime wedges on the side.
