Instructions

  1. Prepare the caramelized onions if making fresh: Slice one large onion thinly. Heat 1 tablespoon of butter in a skillet over medium-low heat. Add onions with a pinch of salt and cook slowly, stirring occasionally, until deep golden brown and sweet, about 25-30 minutes. Skip if using store-bought.
  2. In a bowl, combine shredded gruyère and mozzarella cheeses. Toss in thyme and a pinch of pepper for seasoning.
  3. Spread softened butter evenly on one side of each bread slice; this will be the outside that crisps up.
  4. Place two slices of bread, butter side down, on a clean surface. Evenly distribute caramelized onions over the bread, then sprinkle the cheese mixture on top. Add garlic powder if desired. Top with remaining bread slices, butter side up.
  5. Heat a skillet over medium heat. Place the sandwich in the pan and cook for 3-4 minutes until golden brown and crispy. Carefully flip using a spatula, pressing down gently, and cook another 3-4 minutes until the other side is crisp and cheese is melted.
  6. Check doneness: bread should be deep golden brown and resist light pressure; cheese should be gooey and slightly oozing. If cheese isn’t melted enough, lower heat and cover skillet for a minute.
  7. Remove sandwich from heat and let sit for 1-2 minutes before slicing to keep melty flavors intact.
