A quick and flavorful weeknight dinner made with rotisserie chicken, black beans, corn, and taco seasoning. This soup is ready in under 30 minutes and offers deep, complex flavors with minimal effort.

  • 2 cups (approx. 3 cups shredded) rotisserie chicken, shredded
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 packet (2-3 tbsp) taco seasoning
  • 1 tbsp olive oil or butter
  • 1 fresh lime (juice and zest)

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces and set aside.
  2. Heat olive oil or butter in a large pot over medium heat.
  3. Add taco seasoning to the hot oil and stir constantly for 30-60 seconds to bloom the spices.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  5. Add the drained black beans and corn to the pot and stir to combine.
  6. Bring the soup to a gentle boil, then reduce heat to low and simmer uncovered for 10 minutes.
  7. Add the shredded chicken back into the pot and heat through for 2 minutes.
  8. Remove from heat and stir in the fresh lime juice. Taste and adjust seasoning if needed.

Notes

Add lime juice at the very end to preserve brightness. Use low-sodium broth to control salt levels. For a thicker soup, mash some beans against the side of the pot. Leftovers store well for up to 4 days and freeze for up to 3 months.
