Easy 5-Minute Homemade Uncrustables PB&J Pockets

These Quick 5-Minute Copycat Uncrustables PB&J Pockets are a soft, pillowy upgrade to the classic lunchbox staple. Made with just three simple ingredients and no special gadget, they’re ready in minutes and taste fresher than store-bought.

  • 8 slices soft white bread (or whole wheat, brioche, or gluten-free bread)
  • ½ cup creamy peanut butter (e.g., Skippy or Jif)
  • ½ cup strawberry jam or jelly (seedless preferred)
  • 1 tablespoon melted butter (optional, for toasting edges)

Instructions

  1. Flatten the bread: Take 4 slices of bread and gently roll them with a rolling pin until about ¼ inch thick. (If you don’t have a rolling pin, press down firmly with the bottom of a measuring cup.)
  2. Spread the peanut butter: On each flattened slice, spread about 1 tablespoon of peanut butter, leaving a ½-inch border around the edges.
  3. Add the jam: Spoon about 1 tablespoon of jam onto the center of the peanut butter. Do not spread it to the edges.
  4. Top with second slice: Take a second slice of bread (unflattened) and place it on top, peanut butter side down. Press gently around the edges to start the seal.
  5. Seal the edges: Use a small round cookie cutter or a drinking glass (about 3-4 inches wide) to press down firmly around the filling, cutting through both layers of bread. Rock the cutter slightly to ensure a clean seal. Lift it up—you should have a perfectly sealed pocket. If the edges aren’t fully sealed, press them together with your fingers.
  6. Optional: Toast the edges: If desired, brush the outside of each pocket with melted butter and pan-fry in a non-stick skillet over medium heat for 1-2 minutes per side.
  7. Serve or store: Enjoy immediately, or wrap each pocket individually in parchment paper and store in an airtight container.

Notes

Use room-temperature bread for best sealing. If jam is runny, simmer for 2-3 minutes to thicken. For a stronger seal, run the cutter or glass under hot water before pressing. These freeze well for up to 3 months.
