Ingredients

Scale
  • 4 large flour tortillas (burrito size)
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) dry ranch seasoning mix
  • 12 slices deli turkey breast (oven-roasted or smoked)
  • 1 cup fresh spinach leaves (optional)
  • 1/2 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved if large
  • 1 cup baby carrots
  • 1/2 cup cucumber slices
  • 1/2 cup grapes or apple slices
  • 1/4 cup ranch dressing (for dipping)
  • 1/4 cup nuts or seeds (almonds, walnuts, or pumpkin seeds)
  • Optional: 2 oz cheese cubes (cheddar, gouda, or pepper jack)

Instructions

  1. In a small mixing bowl, combine the softened cream cheese and dry ranch seasoning mix. Stir until fully incorporated. Set aside.
  2. Lay the flour tortillas flat on a cutting board. If cold, microwave for 10 seconds to make pliable.
  3. Spread about 2 tablespoons of the ranch cream cheese mixture evenly over each tortilla, leaving a 1-inch border around the edges.
  4. Place 3 slices of turkey on each tortilla, overlapping slightly. Add a small handful of spinach leaves (about 1/4 cup) and sprinkle with 2 tablespoons of shredded cheddar cheese. Press down gently.
  5. Starting at one end, roll the tortilla tightly without tearing, tucking in fillings as you go. Place seam-side down.
  6. Wrap each roll-up tightly in plastic wrap or parchment paper. Refrigerate for at least 10 minutes (30 is better).
  7. Unwrap the chilled roll-ups and slice each into 1-inch pinwheels using a sharp serrated knife.
  8. Arrange 4-5 turkey ranch roll-ups in one compartment of a bento box. Fill other compartments with cherry tomatoes, baby carrots, cucumber slices, grapes, and nuts. Add a small container of ranch dressing for dipping.
  9. If desired, sprinkle extra ranch seasoning or flaky salt over the roll-ups. Close the lid and refrigerate until ready to eat. These keep for up to 3 days.

Notes

Don’t skip the chilling step—it firms up the cream cheese for clean slices. Use room temperature cream cheese to avoid tearing tortillas. Store roll-ups unsliced for up to 3 days; slice just before serving. For best flavor, make a day ahead.
