Crisp apple slices topped with a warm peanut butter drizzle, dark chocolate chips, chopped peanuts, and shredded coconut. A quick, healthy snack that tastes like a treat.

Ingredients

Scale
  • 2 large apples (Honeycrisp, Fuji, or Granny Smith)
  • 1/2 cup creamy peanut butter
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • 1/4 cup dark chocolate chips (mini preferred)
  • 1/4 cup chopped peanuts
  • 2 tablespoons shredded coconut (unsweetened)
  • Pinch of flaky sea salt

Instructions

  1. Wash and dry the apples. Cut in half through the stem, scoop out the core, and slice into thin wedges about 1/4-inch thick. Arrange in a single layer on a serving platter.
  2. In a small saucepan over low heat, combine peanut butter, coconut oil, and maple syrup. Stir constantly until smooth and warm, about 2-3 minutes.
  3. Drizzle the warm peanut butter mixture evenly over the apple slices.
  4. While the drizzle is still warm, sprinkle dark chocolate chips, chopped peanuts, and shredded coconut over the apples.
  5. Finish with a pinch of flaky sea salt. Serve immediately.

Notes

Best served immediately. Apples will brown and soften after 30 minutes. For make-ahead, slice apples and toss with lemon juice, then refrigerate. Add drizzle and toppings just before serving.
