  • 2 large eggs, room temperature

  • 3 to 3 ½ cups all-purpose flour

  • 1 teaspoon salt
  • 3 tablespoons meringue powder
  • 4 cups confectioners’ sugar, sifted
  • 3 to 4 tablespoons warm water
  • Black gel food coloring
  • ½ teaspoon lemon juice

Instructions

  1. Cream the softened butter and granulated sugar together in a large bowl until light and fluffy, about 3-4 minutes.
  2. Beat in the eggs one at a time, mixing well after each addition, then add the vanilla extract. Scrape down the sides of the bowl.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients on low speed until just combined. Do not overmix.
  5. Divide the dough into two disks, wrap tightly in plastic wrap, and refrigerate for at least 2 hours or overnight.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the dough on a lightly floured surface to about 1/8 inch thick. Cut into cat shapes using a cookie cutter.
  8. Place cutouts on baking sheets and bake for 10-12 minutes until edges are lightly golden but centers look soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Whisk meringue powder and warm water until frothy. Add confectioners’ sugar, lemon juice, and black gel coloring. Beat on high for 5-7 minutes until stiff peaks form.
  11. Pipe the black icing to fill in the cat shapes and let dry for 1-2 hours.
  12. Use remaining white icing (or reserved portion) to add details like eyes, noses, and whiskers.

Notes

Chilling the dough is crucial to prevent spreading. Use gel food coloring for the black icing, as liquid coloring will make it runny and gray. Ensure the bowl for icing is completely free of grease. Allow royal icing to dry completely before handling to prevent sticking.
