  • 2 cups (480ml) whole milk
  • 2 cups (200g) sharp cheddar cheese, freshly shredded
  • 4 ounces (115g) cream cheese, softened
  • 3 tablespoons (45ml) ketchup
  • 2 tablespoons (30ml) yellow mustard
  • ¼ cup (60ml) dill pickle relish, plus extra for garnish
  • 1 tablespoon (15ml) Worcestershire sauce
  • Salt and black pepper to taste
  • Optional toppings: shredded lettuce, diced tomatoes, extra pickles, crispy bacon bits, more shredded cheese

Instructions

  1. Brown the Beef: Heat a large Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until nicely browned (6-8 minutes). Spoon off excess fat, leaving about 1 tablespoon.
  2. Sauté the Aromatics: Add diced onion to the pot. Cook 3-4 minutes until soft and translucent. Add minced garlic and cook 30 seconds until fragrant.
  3. Add the Potatoes and Broth: Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat to medium-low. Simmer 15-20 minutes until potatoes are fork-tender.
  4. Incorporate the Dairy: Reduce heat to low. Stir in whole milk and softened cream cheese. Whisk gently until cream cheese is fully melted (2-3 minutes). Do not let boil.
  5. Add the Cheeseburger Flavors: Stir in ketchup, yellow mustard, dill pickle relish, and Worcestershire sauce. Mix well. Taste and adjust seasoning with salt and pepper.
  6. Melt the Cheese: Gradually add shredded cheddar cheese, a handful at a time, stirring constantly until each addition is fully melted before adding the next.
  7. Adjust Consistency: If too thick, add a splash more milk or broth. If too thin, let simmer a few more minutes to reduce.
