This creamy cucumber salad with dill and sour cream is a quick, refreshing summer side dish made with simple ingredients. Salting the cucumbers ensures a non-watery, perfectly creamy dressing every time.

  • 2 large or 3 medium English or Persian cucumbers
  • 1 cup sour cream (full-fat recommended)
  • 3 tablespoons fresh dill, chopped
  • 1/2 medium red onion, thinly sliced
  • 2 tablespoons white vinegar
  • 1 teaspoon kosher salt (plus more for salting cucumbers)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon sugar (optional)

Instructions

  1. Wash and slice the cucumbers as thinly as possible (about 1/8-inch thick). Leave the skin on if using English or Persian cucumbers.
  2. Place sliced cucumbers in a large bowl, sprinkle with 1 teaspoon kosher salt, and toss gently. Let sit for 15-20 minutes to draw out excess water.
  3. While cucumbers rest, thinly slice the red onion. If desired, soak slices in cold water for 10 minutes to mellow sharpness, then drain well.
  4. After 15-20 minutes, pour cucumbers into a colander to drain. Pat dry thoroughly with a clean kitchen towel or paper towels.
  5. In a small bowl, whisk together sour cream, white vinegar, chopped dill, black pepper, and sugar (if using) until smooth.
  6. Return dried cucumber slices to the large bowl. Add drained red onion slices. Pour dressing over and toss gently until evenly coated.
  7. Let the salad rest at room temperature for 10-15 minutes before serving to allow flavors to meld.
  8. Give a final gentle toss, adjust seasoning if needed, and serve.

Notes

Do not skip salting the cucumbers—it prevents a watery dressing. Pat cucumbers dry thoroughly after salting. Fresh dill is essential; dried dill will not provide the same bright flavor. Best served within an hour of making. For make-ahead, prep components separately and combine just before serving.
