Instructions

  1. Chop the onion and mince the garlic. Rinse and drain the black beans and corn. Trim any excess fat from the chicken thighs.
  2. Place the chicken thighs at the bottom of the slow cooker. Add diced tomatoes with green chilies, salsa, black beans, corn, chopped onion, and minced garlic.
  3. Pour in 4 cups of chicken broth. Sprinkle in ground cumin and chili powder. Season lightly with salt and pepper.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is tender and shreddable.
  5. Remove chicken thighs and shred with two forks. Return shredded chicken to the soup and stir well.
  6. Taste and adjust seasoning with salt, pepper, or chili powder as needed. For thicker soup, cook uncovered on high for an additional 15-20 minutes.
  7. Prepare the toppings bar: crush tortilla chips, shred cheese, slice avocado, chop cilantro and green onions, and arrange lime wedges.
