  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin

Instructions

  1. Prep your ingredients: Dice the onion and mince the garlic. Drain and rinse the beans. Open the green chiles. Cube the cream cheese.
  2. Layer the ingredients in the slow cooker: Place chicken breasts in the bottom. Sprinkle onion and garlic over chicken. Add beans and green chiles. Pour in chicken broth until most ingredients are submerged.
  3. Add seasonings: Sprinkle cumin, oregano, chili powder, salt, and pepper over everything. Add bay leaves. Do not stir.
  4. Cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through and tender.
  5. Shred the chicken: Remove chicken from slow cooker, shred with two forks, and return to the pot.
  6. Add cream cheese: Stir in cubed cream cheese until fully melted and broth is creamy (about 5 minutes on low heat).
  7. Remove bay leaves and adjust seasoning to taste. If too thick, add a splash of broth; if too thin, cook uncovered for 15-20 minutes.
  8. Serve hot with desired toppings: cheese, sour cream, cilantro, avocado, tortilla chips, and lime wedges.
