Ingredients

Instructions

  1. Rinse and halve the cherry tomatoes. Tear or roughly chop the fresh basil leaves, keeping some whole for garnish. Slice any optional veggies like roasted peppers or olives.
  2. In your lunchbox, arrange a handful of mini mozzarella balls in one compartment. Toss them lightly with a teaspoon of olive oil, a pinch of salt, and freshly cracked black pepper for extra flavor.
  3. Place pepperoni slices next to the mozzarella. Add your cherry tomato halves and any optional veggies in an adjacent section.
  4. Keep crackers or toasted baguette slices separate in their own compartment or container to maintain their crunch.
  5. Sprinkle torn basil over the tomatoes and mozzarella for freshness. If you like, pack a small container of olive oil or your favorite balsamic glaze to drizzle just before eating.
