Ingredients

Scale
  • 2 cups cooked shredded chicken (canned chicken in water, drained, or leftover rotisserie chicken)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot Original)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup ranch or blue cheese dressing
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon celery salt
  • Salt and black pepper to taste
  • 1 package (12 ounces) wonton wrappers (about 2430 wrappers)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon everything bagel seasoning (optional)
  • Ranch dressing or blue cheese dressing (for serving)
  • Celery sticks and carrot sticks (for serving)
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper.
  2. Make the buffalo chicken filling: In a medium mixing bowl, combine the shredded chicken, softened cream cheese, buffalo hot sauce, shredded cheddar cheese, crumbled blue cheese (if using), ranch dressing, garlic powder, onion powder, and celery salt. Mix until well combined and creamy. Taste and adjust seasoning.
  3. Set up your assembly station: Lay a clean, dry cutting board or counter space. Place wonton wrappers on a plate and cover with a slightly damp paper towel. Place the bowl of filling and a small bowl of water nearby.
  4. Assemble the football bites: Take one wonton wrapper and place it like a diamond (one point facing you). Scoop about 1 tablespoon of filling and place it in the center. Dip your finger in water and moisten the edges. Fold the bottom point up to meet the top point, creating a triangle. Press edges to seal. Take the two side points of the triangle and bring them together at the back, overlapping slightly. Press to seal. Place on the prepared baking sheet. Repeat with remaining wrappers and filling…
  5. Brush with butter and season: Melt the butter. Using a pastry brush, lightly brush the top of each football bite with melted butter. Sprinkle a pinch of everything bagel seasoning or sesame seeds on top.
  6. Bake until golden and crispy: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the wontons are golden brown and the filling is hot and bubbly.
  7. Cool slightly before serving: Remove from oven and let cool on the sheet for 2-3 minutes. Transfer to a serving platter and garnish with chopped parsley or chives if desired. Serve with ranch or blue cheese dressing on the side for dipping.

Notes

Keep wonton wrappers covered with a damp paper towel to prevent drying. Do not overstuff; use exactly 1 tablespoon of filling. Seal edges with water, not egg wash. Butter is essential for browning and crispiness. For best results, serve immediately after baking. To reheat, place on a baking sheet in a 350°F oven for 5-7 minutes. Freeze unbaked bites for up to 3 months; bake from frozen at 375°F for 15-18 minutes.
