  • ⅔ cup powdered sugar, sifted

  • 1 cup heavy cream, cold
  • 2 cups frozen strawberries, thawed
  • 3 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional)

Instructions

  1. Prepare the crust: Crush graham crackers into fine crumbs. Mix with melted butter, sugar, and cinnamon until mixture feels like wet sand. Press evenly into bottom of 8×8-inch pan. Chill in fridge.
  2. Make the cheesecake layer: Beat softened cream cheese with powdered sugar and vanilla extract until smooth. Whip cold heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture.
  3. Spread cheesecake layer evenly over chilled crust. Smooth top and chill in fridge.
  4. Prepare strawberry topping: In medium saucepan, combine thawed strawberries, sugar, and lemon juice. Cook over medium heat until berries break down and mixture bubbles (5-7 minutes). Stir in cornstarch slurry if thicker topping desired. Cool completely.
  5. Spread cooled strawberry topping evenly over cheesecake layer. Cover pan tightly and freeze for at least 3 hours until firm.
  6. Before serving, let bars sit at room temperature for 10-15 minutes. Slice into bars with a sharp knife.

Use room temperature cream cheese for smooth batter. Whip heavy cream until stiff peaks form but do not overmix. Press crust firmly and evenly to avoid crumbling. Use cornstarch slurry to thicken strawberry topping if needed. Let bars thaw 10-15 minutes before slicing for cleaner cuts. Store in freezer up to 2 weeks.
