Instructions

  1. Prep your ingredients: Slice the Italian deli meats into bite-sized squares or fold into small bundles. Cut provolone cheese into roughly 1-inch cubes. Cube crusty bread into similar sizes. Halve cherry tomatoes if large, and slice red onions thinly. Drain olives and pickled peppers well.
  2. Optional marinade: In a mixing bowl, toss bread cubes, cherry tomatoes, and olives with 1 tablespoon Italian dressing, a sprinkle of dried oregano, black pepper, and a pinch of red pepper flakes to infuse flavor before assembling.
  3. Assemble the skewers: Thread one piece of each component onto a skewer, starting with bread, then folded salami, provolone cube, cherry tomato, olive, and finish with a slice of pepperoncini or red onion. Aim for 5-6 bites per skewer.
