Easy One-Bowl Banana Chocolate Chip Muffins

A quick and easy muffin recipe using ripe bananas and chocolate chips, perfect for busy mornings or snacks. Made in one bowl with simple pantry staples, these muffins are moist, fluffy, and delicious.

  • 3 medium ripe bananas, mashed
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (115g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. Stir in the melted butter, granulated sugar, eggs, and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet banana mixture and fold gently with a spatula just until combined. Do not overmix.
  6. Toss the chocolate chips in a tablespoon of flour, then fold them into the batter. Add nuts if using.
  7. Spoon the batter into the muffin cups, filling each about ¾ full.
  8. Bake for 18-22 minutes, checking at 18 minutes with a toothpick. It should come out with a few moist crumbs but no raw batter.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely or enjoy warm.

Notes

Do not overmix the batter to avoid tough muffins. Use very ripe bananas for best flavor and moistness. Toss chocolate chips in flour before folding to prevent sinking. Reduce melted butter by 1 tablespoon if bananas are very watery. Rotate pan halfway through baking if your oven bakes unevenly.
