Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light, fluffy, and pale (about 2-3 minutes).
  3. Add the pumpkin puree, egg, and vanilla extract. Beat on medium speed until fully combined and smooth.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, and 1 1/2 teaspoons cinnamon.
  5. Gradually add the dry ingredients to the wet mixture and mix on low speed or by hand just until the flour disappears. Do not overmix.
  6. Cover the bowl and refrigerate the dough for at least 30 minutes (or up to 24 hours) to prevent spreading.
  7. While the dough chills, mix the 1/2 cup sugar and 1 teaspoon cinnamon for the coating.
  8. Scoop dough into 1.5 tablespoon portions and roll into balls. Roll each ball in the cinnamon-sugar mixture to coat.
  9. Place cookies on prepared baking sheets, leaving 2 inches of space between each.
  10. Bake for 10-12 minutes, rotating the sheet halfway through, until edges are set and lightly golden but centers look soft.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
