Instructions

  1. Mash the bananas: Peel ripe bananas and place in a large mixing bowl. Use a fork or potato masher to mash until smooth with a few small lumps remaining (about 1/2 cup).
  2. Add peanut butter and honey: Scoop in 1/2 cup creamy peanut butter and 2 tablespoons honey (or maple syrup). Stir with a rubber spatula until well combined and glossy. If peanut butter is thick, microwave for 10 seconds.
  3. Mix in dry ingredients: Add 1 cup rolled oats, 1/4 cup mini chocolate chips (if using), 1 tablespoon ground flaxseed (if using), a pinch of sea salt, and 1/2 teaspoon vanilla extract. Stir until evenly distributed. If too wet, add 1 tablespoon more oats; if too dry, add 1 teaspoon more honey.

  6. Final chill: Place rolled bites on parchment-lined sheet and refrigerate for at least 30 minutes (or 15 minutes in freezer) to firm up.
  7. Store and enjoy: Transfer to an airtight container. Refrigerate for up to 1 week or freeze for up to 3 months.
