  • ¼ cup buttermilk
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 1 teaspoon white vinegar

Instructions

  1. Make the ranch dip: In a small mixing bowl, combine 1 cup sour cream, ½ cup mayonnaise, ¼ cup buttermilk, 2 tablespoons fresh dill, 1 tablespoon fresh parsley, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon salt, ¼ teaspoon black pepper, and 1 teaspoon white vinegar. Whisk until smooth and creamy. Cover and refrigerate while you prep the veggies.
  2. Prep the bell peppers: Wash all bell peppers. Cut off the tops and bottoms, remove the seeds and white membranes, then slice each pepper into thin strips about ¼ inch wide.
  3. Prep the carrots: Peel the carrots, then cut them into thin matchsticks about 3 inches long.
  4. Prep the cucumber: Slice the cucumber into thin rounds, about ⅛ inch thick.
  5. Shred the purple cabbage: Cut the cabbage wedge into thin shreds using your knife or a mandoline. You want about 1 cup of shredded cabbage.
  6. Prep the celery and tomatoes: Slice celery into thin strips, about 3 inches long. Halve the cherry tomatoes.
  7. Arrange the platter: Place the small bowl of ranch dip in the center of your football-shaped platter. Starting from one pointed end, lay down a row of red bell pepper strips, slightly overlapping. Next, add a row of orange bell pepper strips, then yellow, green, purple cabbage, carrot matchsticks, cucumber rounds, and celery strips. Each stripe should follow the curve of the football shape. Fill any gaps with cherry tomato halves.
  8. Final touches: Adjust any stripes that look uneven. Add a few extra tomato halves at the ends to create the pointed football shape. Sprinkle a little fresh dill or parsley over the ranch dip for color.
