A quick and easy loaded nachos bar perfect for game day, featuring layers of crispy chips, melted cheese, spicy sausage, fresh veggies, and three distinctive dipping sauces.

  • Tortilla chips (thick and sturdy ones work best to hold toppings)
  • 2 cups shredded sharp cheddar cheese (about 200g)
  • 1 cup shredded Monterey Jack cheese (about 100g)
  • 8 oz spicy Italian sausage, cooked and crumbled (about 225g)
  • 1 can black beans, drained and rinsed (15 oz / 425g)
  • 2 fresh jalapeños, thinly sliced (optional)
  • ½ cup diced red onion (about 75g)
  • ¼ cup chopped fresh cilantro (about 15g)
  • 1 cup cherry tomatoes, halved (about 150g)
  • For the Chipotle Mayo: ½ cup mayonnaise (120ml), 1-2 tsp minced chipotle in adobo sauce, 1 tbsp lime juice (15ml)
  • For the Cilantro-Lime Crema: ½ cup sour cream or Greek yogurt (120ml), 1 tbsp fresh lime juice (15ml), 2 tbsp chopped cilantro (8g), salt to taste
  • For the Salsa Verde: ¾ cup tomatillo salsa (180ml), store-bought or homemade

Instructions

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Cook the sausage in a skillet over medium heat, crumbling and cooking until browned and cooked through, about 7-8 minutes. Drain excess fat and set aside.
  3. Prepare the dipping sauces: Mix mayonnaise, minced chipotle, and lime juice for chipotle mayo; combine sour cream or Greek yogurt, lime juice, cilantro, and salt for cilantro-lime crema; keep salsa verde chilled or at room temperature.
  4. Spread a layer of tortilla chips evenly on the baking sheet. Sprinkle half the shredded cheddar and Monterey Jack cheeses over the chips.
  5. Scatter half the cooked sausage, black beans, diced red onion, jalapeños, and cherry tomatoes over the cheese layer.
  6. Add another layer of chips, then the remaining cheeses, sausage, and veggies.
  7. Bake for 10-12 minutes until cheese melts and bubbles, watching closely to avoid burning.
  8. Remove from oven and sprinkle freshly chopped cilantro on top.
  9. Serve immediately with the three dipping sauces arranged in small bowls around the nachos bar.

Notes

Use thick-cut tortilla chips to prevent sogginess. Drain sausage fat well to avoid greasy nachos. Prepare sauces ahead to save time. Serve sauces on the side to keep chips crispy. For a lighter crema, use Greek yogurt instead of sour cream. Adjust chipotle amount to control heat. Keep chips warm in a low oven if prepping early.
