Flavorful Grilled Peach Burrata Salad with Prosciutto and Honey

A simple yet elegant summer salad featuring grilled peaches, creamy burrata, salty prosciutto, and a sweet honey drizzle. Perfect for quick gatherings and fresh summer meals.

  • 3 large ripe peaches, halved and pitted
  • 8 ounces (225g) fresh burrata cheese, at room temperature
  • 4 ounces (115g) thinly sliced prosciutto
  • 2 tablespoons raw or wildflower honey
  • 4 cups (about 120g) arugula or mixed greens, washed and dried
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional garnishes: toasted pine nuts or chopped fresh basil

Instructions

  1. Preheat your grill or grill pan to medium-high heat, about 400°F (200°C), for approximately 10 minutes.
  2. Rinse and dry the peaches, then cut them in half and remove the pits. Lightly brush the cut sides with olive oil.
  3. Place the peaches cut side down on the grill. Grill for 3-4 minutes until grill marks appear and peaches soften slightly but hold their shape.
  4. Flip the peaches and grill the skin side for another 2 minutes. Use tongs gently to avoid breaking the fruit.
  5. While peaches grill, toss arugula or mixed greens in a bowl with lemon juice, olive oil, and a pinch of salt and pepper.
  6. Arrange the dressed greens on a serving platter. Tear the burrata into chunks and scatter over the greens.
  7. Add the grilled peach halves, cut side up, nestled between the greens and burrata.
  8. Drape thin slices of prosciutto over the salad in loose folds.
  9. Drizzle honey evenly over the entire salad. Optionally, sprinkle toasted pine nuts or fresh basil on top.
  10. Season with freshly ground black pepper and a pinch of flaky sea salt if desired.

Notes

Let burrata sit at room temperature for at least 15 minutes before assembling to enhance creaminess. Warm honey slightly if too thick to drizzle. Avoid overcrowding peaches on the grill to prevent mushiness. Burrata should not be refrigerated right before serving.
