  • 2 cups sharp cheddar cheese, shredded (about 200g)
  • 4 ounces cream cheese, softened (about 115g)
  • 2 tablespoons jarred pimentos, drained and chopped
  • 1/4 cup mayonnaise (60ml)
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 12 mini slider buns or soft dinner rolls
  • 1/4 cup pickled jalapeños, thinly sliced (about 30g)
  • 2 tablespoons butter, melted

Instructions

  1. In a medium mixing bowl, add the softened cream cheese and mayonnaise. Using an electric mixer or fork, beat until smooth and creamy (about 2-3 minutes).
  2. Gradually fold in the shredded sharp cheddar cheese, mixing evenly but leaving some chunks for texture.
  3. Stir in the chopped pimentos, yellow mustard, garlic powder, salt, and black pepper. Taste and adjust seasoning as needed.
  4. Slice mini slider buns in half horizontally and brush the cut sides lightly with melted butter.
  5. Heat a skillet over medium heat. Place buns cut-side down and toast for about 1-2 minutes until golden brown and slightly crisp.
  6. Spread a generous dollop of the pimento cheese filling on the bottom half of each toasted bun.
  7. Top with a few slices of pickled jalapeño according to your spice preference.
  8. Place the top bun over the filling, arrange on a serving platter, and serve immediately.

Notes

Soften cream cheese at room temperature for at least 30 minutes before mixing for best texture. Freshly shred sharp cheddar cheese for optimal flavor and texture. Toast buns on medium heat to avoid burning butter. Assemble just before serving to keep buns crisp. Cheese filling can be made up to 2 days ahead and stored refrigerated.
