  • Fresh lettuce leaves

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the eggs carefully, placing yolks in one bowl and whites in another, ensuring no yolk gets into the whites.
  3. Whip the egg whites with an electric mixer on medium-high speed until stiff peaks form.
  4. In the yolk bowl, mix softened cream cheese, baking powder, salt, and optional xanthan gum until smooth.
  5. Gently fold the egg whites into the yolk mixture in batches using a spatula, being careful to keep the mixture airy.
  6. Scoop the mixture onto the baking sheet, shaping 6-8 round buns about 3-4 inches wide.
  7. Bake for 25-30 minutes until the buns are golden brown and firm to the touch.
  8. While buns bake, combine ground beef with salt, pepper, garlic powder, onion powder, and Worcestershire sauce. Form into 6-8 equal patties.
  9. Heat a skillet or grill pan over medium-high heat. Cook patties for 3-4 minutes per side or until desired doneness. Add cheese slices on top in the last minute to melt.
  10. Assemble your burger bar by placing buns on a platter, patties next to them, and arranging toppings and condiments in bowls for customization.

Notes

Use room temperature eggs for better whipping. Ensure mixing bowls and beaters are clean and grease-free to achieve stiff peaks. Fold egg whites gently to keep buns fluffy. Handle buns gently as they are delicate. If buns puff too much in the oven, gently press them down with a spatula. Cloud buns do not toast like regular buns; use a dry skillet for crisping if desired. Patties rest a few minutes after cooking to redistribute juices.
