  • 1 cup fresh corn kernels (about 2 ears) or frozen thawed corn
  • 1 can (15 oz / 425 g) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/4 cup red onion, finely chopped (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely diced (optional)
  • 1 ripe avocado, peeled and pitted
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 garlic clove, minced
  • 1/4 cup olive oil (extra virgin)
  • 2 tablespoons water (to thin dressing as needed)
  • Salt and pepper to taste
  • 1 teaspoon honey or agave syrup

Instructions

  1. Prepare the vegetables: chop red and green bell peppers into small dice, halve cherry tomatoes, finely chop red onion and cilantro, and dice jalapeño if using. Cut kernels from fresh corn if using.
  2. Rinse and drain the black beans thoroughly to remove canning liquid.
  3. Make the vinaigrette: combine avocado, lime juice, minced garlic, olive oil, honey, salt, and pepper in a food processor or blender. Blend until smooth. Add water a tablespoon at a time to reach pourable consistency.
  4. In a large mixing bowl, combine corn, black beans, chopped veggies, and cilantro. Pour the creamy avocado lime vinaigrette over the mixture.
  5. Mix gently with a spatula to coat all ingredients evenly without mashing the beans or tomatoes.
  6. Cover and refrigerate the dip for at least 30 minutes to let flavors meld and textures settle.
  7. Before serving, stir in a splash of water or extra lime juice if the dip is too thick.

Notes

Use ripe avocados for best creaminess. Drain black beans well to avoid watery dip. Chill dip for at least 30 minutes or overnight for best flavor. Stir gently to keep beans and tomatoes intact. For vegan version, replace honey with agave syrup. To prevent avocado browning, press plastic wrap directly on dip surface and store tightly covered.
