  • 1 small head green cabbage, shredded (about 5 cups)
  • 1 cup shredded purple cabbage
  • 2 medium carrots, peeled and grated
  • 1/2 small red onion, thinly sliced (optional)
  • 2 tbsp fresh parsley or cilantro, chopped
  • 1 cup raw cashews, soaked in hot water for 20 minutes
  • 1/4 cup water (adjust for desired consistency)
  • 2 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup or agave
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Soak the cashews in hot water for 20 minutes to soften. For quicker soaking, use warm water for at least 1 hour or soak overnight in cold water.
  2. While cashews soak, shred green and purple cabbage finely using a sharp knife or mandoline. Peel and grate carrots, and thinly slice red onion if using. Toss all vegetables in a large mixing bowl.
  3. Drain soaked cashews and add to a high-speed blender or food processor. Add water, apple cider vinegar, lemon juice, maple syrup, Dijon mustard, garlic powder, salt, and pepper. Blend on high until smooth and creamy, scraping sides as needed. The mayo should be thick but pourable.
  4. Pour cashew mayo over the shredded vegetables. Use a spatula to toss everything together until evenly coated. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  5. Chill the coleslaw in the refrigerator for at least 30 minutes before serving to let flavors meld and maintain crispness. Stir gently before serving.
